Just after I've had a new field definition in the gelleries' section, there's
nothing in the table (<tbody/> empty).

Replacing in « fielddeftab.tpl » on line 46:
{if $items|@count > 1}
by
{if $items|@count > 0}

But, just before the table, there is:
{if $itemcount > 0}
so the « if » on line 46 seems to be redundant.
