A disposition already exists to send the results via email to fixed addresses,
and set the reply to the user-entered email address.

Thank you - just spotted it.

However, if I select that option, complete the fields and save it, it saves
fine, but if I go back in to the Handlers section it has disappeared! Same on
several sites I'm working on running all the latest versions.

Ignore that - realised you need to save the form after adding the Handler!
